3 Simple Arugula Salad Recipes (to Make This Summer)

Don’t you just love arugula?  I think I could eat an arugula salad every single day.  Actually, I practically do!  In the summer when you don’t feel like cooking, an arugula salad can make a great lunch…or dinner!  Here are 3 simple arugula salad recipes to try this summer!

After playing around with many different combinations, I have come up with my 3 favorites ways to make an arugula salad. (in no particular order)…

1 – “The Mango”

Ingredients for “The Mango” Arugula Salad:

  • Arugula
  • Mango chunks 
  • Avocado slices 
  • Goat cheese
  • Sliced almonds
  • Olive oil and lime juice

Sure, you could use a salad dressing of your choice but I think the olive oil and lime juice makes it a refreshing summer salad!  If you like these ingredients, I think you’ll also love my favorite Mango Avocado Salsa.  

*Helpful tip – Since the mango is really the “star” of this recipe, make sure you use a ripe one.  If you can’t find a ripe mango, buy frozen mango chunks.  Usually, I buy the organic ones from Wegman’s and they are just perfect in the salad!

2 -“The Cranberry”

Cranberry and Arugula Salad

Ingredients for “The Cranberry” Arugula Salad:

  • Arugula
  • Dried cranberries 
  • Feta cheese
  • Walnuts
  • Olive oil

Toss all the ingredients together and enjoy!

And if you want more of an Italian spin…

3 -“The Parm”

Arugula Salad with Parmesan

Ingredients for “The Parm” Arugula Salad:

  • Arugula
  • Tomatoes
  • Shaved parmesan cheese
  • Toasted pine nuts
  • Lemon and Olive Oil

Though I am not a huge fan of dressings, my husband likes his arugula salad with olive oil and balsamic vinegar.  You can substitute that for the lemon if you like.

Simple Additions to Arugula Salad:

  • Grilled chicken
  • Slices of store bought rotisserie chicken
  • Grilled shrimp
  • White beans

By extra adding protein, you can turn any of these salads into more of a main course.

You might have noticed I didn’t give measurements for any of the ingredients.  To keep it easy, just cut up the amount you like and throw it in!  After all, it’s summer – get out of the kitchen and enjoy!

  5. I have turned from not caring for arugula to loving it. Here’s my recipe. Everything needs to be fresh. Dressing: Olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt and pepper. Greens: arugula (strip off the long stems, or could choke on it), a small amount of spinach or lettuce is optional. Cheese: Parmesan is mandatory (a good kind), maybe a bit of Feta. Now here is what “makes it”…..cut up pieces of good tasting…da ta da…ORANGES. Oh, my…..it’s good!
