White Chocolate Silk Pie Recipe (aka Ski Bum Pie)
It’s always a pleasant surprise when a recipe comes out even better than you had imagined… Take for instance, our family’s white chocolate silk pie recipe… By tweaking a few ingredients, we came up with a delicious new version of a classic recipe!
White Chocolate Silk Pie Recipe:
Today, I am going to share our family recipe…and the story behind it:
Since some of you have mentioned you find my husband’s stories amusing, I thought I would share another one with you.
This time, the story involves a pie recipe…a white chocolate silk pie recipe…
Let me start by saying that this guy is not the easiest person to buy gifts for. He really doesn’t ask for much. So, every Christmas and birthday I search around like a lunatic to come up with something creative.
This past birthday, he only requested one thing…
He wanted me to create a white chocolate version of his family’s chocolate silk pie recipe.
Easy enough, right? Well…he wanted this pie to be very specific.
In fact, one night while we were out to dinner in Vermont, he decided to draw his instructions on a napkin for me…
In place of the chocolate mousse, he wanted a white chocolate mousse. (He called it mousse but the family recipe is more of a custard). Also, he wanted only half of the pie crust to be Oreo and the other half to be a vanilla wafer pie crust. Since this was the only gift he actually asked for, I really had to fulfill his wish…or at least attempt to fulfill his wish!
To get started, I texted my niece the pie drawing. From there, she sent me her French silk pie recipe with suggestions to use for his special requests. As a substitution, we decided to use Vienna Fingers cookies instead of the Vanilla Wafers. After all, we didn’t want the pie to end up being too sweet.
Our White Chocolate Silk Pie Recipe:
For the Crust:
8 Oreo Cookies, broken into rough pieces
8 Vienna Fingers Cookies, broken into rough pieces
4 Tablespoons unsalted butter, melted and cooled
For the Filling:
2 1/2 cups of half and half
1/3 cup of sugar
Pinch of salt
6 large egg yolks
2 Tablespoons cornstarch
6 Tablespoons unsalted butter cut into 6 pieces
7 ounces white chocolate, chopped fine
1 teaspoon vanilla extract
For the Topping:
1 1/2 cups heavy cream, chilled
2 Tablespoons sugar
1/2 teaspoon vanilla extract
Instructions for the Pie Crust:
Adjust oven rack to the middle position and pre-heat oven to 350 degrees. Pulse the Oreo cookies in a food processor until ground coarsely. Sprinkle 2 Tablespoons of the melted butter over the crumbs and pulse again to mix together (about 5 pulses). Repeat using the Vienna Fingers. Please note that you are using the whole cookie for these mixtures, not just the outside cookie part. That’s why it’s important to use regular Oreos and not Double or Triple Stuff types where the filling would be too much.
Sprinkle the two mixtures evenly into a 9 inch pie dish. Using the bottom of a measuring cup, press the crumbs into an even layer on bottom and sides of the dish. Bake 10-15 minutes until set. Transfer the pie dish to a wire rack and cool completely.
Instructions for the Pie Filling:
Bring half and half, 3 Tablespoons of sugar, and salt to simmer in a medium saucepan, stirring occasionally.
As the half and half mixture begins to simmer, whisk the egg yolks, cornstarch, and remaining sugar together in a medium bowl until smooth. Slowly whisk 1 cup of the simmering half and half mixture into the yolk mixture to temper, then slowly whisk the tempered yolk mixture back into the remaining half and half mixture. Reduce the heat to medium and cook, while whisking, until the mixture is thickened and bubbly on the surface. (about 30 seconds). Remove from heat, whisk in butter and white chocolate until completely smooth and melted. Then stir in vanilla.
Pour the warm filling into the cooled pie crust. Lay a sheet of plastic wrap directly on top of the filling and refrigerate the pie until the filling is chilled and set. (About 4 hours).
Instructions for the Silk Pie Topping:
Once the pie is chilled, use a mixer to whip the cream, sugar and vanilla on medium-low speed until foamy. Increase speed until soft peaks form. (2-3 minutes). Spread the whipped cream over the pie and serve.
It only made sense to rename this version of the White Chocolate Silk Pie recipe to “Ski Bum Pie”!
After all, it is white and was created on a ski trip to Vermont!
Luckily, our version of the silk pie ended up being a huge hit at the family birthday dinner for my husband. I think everyone wanted to try it so they could compare it to the original version. They may have even loved it more! I am a chocolate person and even I thought the white chocolate version was amazing! All I know, is that we didn’t have a crumb left over and we may or may not have licked the pie dish!
*If you want to try the original silk pie version, just make the whole crust with Oreos and substitute the white chocolate for 6 ounces of semisweet chocolate and 1 ounce of bittersweet chocolate. By the way, I just discovered that March 6th is National Oreo Cookie Day! Too funny – they have a day for EVERYTHING, don’t they?
If your husband is also difficult to shop for, you could always try getting creative with a recipe! Or you might want to try doing something like I did for his Christmas presents last year…Getting Creative with the Husband Gifts. Yes, this idea could work for birthdays too!

Your hubby might be on to something with the half and half crust. Kind of makes me think of a black and white cookie in crust form. This sounds really good. Might try this out as an Easter dessert!
