Easy Chicken Teriyaki Stir Fry Recipe

Like many of you, I’m always looking for quick and simple ideas for dinner.  The other night I threw together an easy Chicken Teriyaki Stir Fry and my kids raved about it like I spent hours cooking.  Note to self…don’t spend hours cooking anymore!  (Not like I really did before anyway…)

Easy Chicken Teriyake Stir Fry Recipe:

Easy Chicken Teriyaki Stir Fry Ingredients:

Chicken Breast (cut into small pieces

Olive Oil

Frozen Vegetables – Stir Fry Blend (without sauce)

Bottled Teriyaki Sauce

Rice

Directions:

Heat up the olive oil in a large pan.

Add the chicken until cooked through, then remove it and set aside.

Add a little more oil and then the frozen vegetables.  (To help prevent the vegetables from becoming too soggy, you can rinse off any ice and dry them as much as possible before adding to the pan.)

After a few minutes, add back in the chicken along with about 1/2 the bottle of teriyaki sauce.

Cook until heated.

Serve over rice.

Organic Teriyaki Sauce

Recently, I started using this Wegman’s store brand Organic Teriyaki Sauce.  It’s actually quite good and it doesn’t have any high fructose corn syrup or genetically modified soybeans like most brands.  It can be so hard to find healthier processed foods these days.

For extra flavor, I threw in a few leftover pineapple pieces on the side.  With not much effort, we had a delicious and EASY dinner!  In the future, I’ll be adding this one to my dinner rotation.  Thankfully, it was a hit!

  4. Gosh that looks good! I like how easy it is to make most of all. I love dishes that have the meat and vegetables all in one. I will have to give this a try. We cook a lot of meats with side dishes for dinner. We like to use our grill in the warmer months which is the majority of the time around here. Then I cook up a rice or potato side and a vegetable. Sometimes, we make chicken pot pie, speghetti, nachos or tacos too. And I also like to incorporate fish when I can. I buy the frozen marinated fish they sell at Costco. It's really good. They're breaded shrimp is equally good!
